John Troia is the co-founder of Tempus Fugit Spirits, which began its mission in 2007 to bring historically produced absinthes to the US market after being banned for almost 90 years. As an absinthe historian, John has conducted numerous educational seminars on the authentic history and development of one of the most storied and misunderstood spirits of the 19th and 20th Centuries.

Recognizing the absence of other historically produced cocktail modifiers such as crèmes, bitters, and liqueurs that were commonly used in the earliest days of the cocktail evolution of the 19th Century, John turned his research and focus towards uncovering authentic 19th Century recipes for some of the most important spirits used in many of the legendary cocktail recipes. These spirits were developed from extensive research for historical accuracy and crafted using the highest quality natural ingredients and produced using historic protocols.

Tempus Fugit Spirits is now widely regarded as the producer of some of the finest and most historically authentic spirits from the 19th Century, which can be found gracing the shelves of the best cocktail bars in the US and worldwide.

Widely regarded as an expert on historic spirits, John Troia has been cited in a variety of cocktail publications and has conducted seminars with numerous US Bartender Guild chapters, along with other industry venues and is in regular demand as a speaker on the history of 19th Century spirits.

Charles began his hospitality career hauling food and trays at the early age of 16...Moved onto Portand Me., Boston and PTown Mass. San Francisco and Santa Cruz Ca. and ended up in Napa Ca as the Maitre D of Press St Helena. Healdsburg is now home with a daily commute to Napa. The stories are many and very discreet.

Maître d’ Nick Peyton

Nick Peyton has spent his entire fifty-year working career in the hospitality industry performing every possible position from dishwasher through owner, but the front of house has always been his principal focus. His first major management job was at the Fairmont Hotel’s Squire Room. From 1978 through 1987 the Squire won the most prestigious awards of that day. Then from 1987 to 1991 he was at the helm of Masa’s, acknowledged during those years as the greatest restaurant in the Bay Area.

Moving to the Ritz Carton Dining Room in 1991 he guided it to the same lofty position, leading him to partner with the Dining Room Chef Gary Danko at his eponymous restaurant in 1999.

In 2001 Douglas Keane invited Nick to join him in creating a dining destination in Healdsburg, Sonoma County. Their partnership, tested by the challenges of independent restaurant ownership, has persevered the past 17 years to great success; first with Market Restaurant in St Helena, through the Two Michelin Star Cyrus, the classic “burger joint” Healdsburg Bar and Grill and now Two Birds One Stone.

After all those years have flown by; each time stepping onto the restaurant floor brings him renewed excitement and a passion for creating special dining experiences for every guest.

He works full time as the general manager alongside bar manager Megan Daniel at Whitechapel in San Francisco. The restaurant boasts the largest gin collection in North America, and Megan is the director of 700+ gins, plus is the Bols Genever brand ambassador, and queen of all things gin.

On this episode of Bar Stories, Cappy tries to kill us with his homemade zombie recipe, a quart container of batched mojitos, cucumber crush Sour beer, a bottle of Pineapple Plantation rum, and of course, a little Fernet Branca. Adam Spiegel was born and raised in San Francisco. From a young age he experienced the bounty that Sonoma County offers through regular visits to the area with his parents to it's beaches, attending concerts and tagging along on wine tastings.

In 2008 he found his passion for creating spirits while assisting a distiller friend in Santa Rosa and soon realized that there could be more to whiskey. Sonoma Distilling Company was founded in 2010 as one of the first 200 distilleries in the United States.

Founder and Co-owner, Timo Marshall, hails from a tiny town in England and declared many years ago Sonoma his home. He spends his days running the business of distilling, pulling hoses, and generally herding cats. His favorite cocktail is a Negroni.

Tasting Room Manager and fixer-of-the-coffee-machine, Amanda Graziano, lives in Santa Rosa and enjoys playing Cornhole and her most recent adventure, Softball with friends. She spends her days coordinating events in the distillery, managing staff, and generally being super creative. Her favorite cocktail is a Bees Knees.

Alley 6 — owned and operated by Krystle and Jason Jorgensen, who started the business after a life-changing trip to Scotland — produces premium spirits in small batches using traditional distilling techniques. Every part of the process is done in the distillery in Healdsburg, California—from milling the grain, to mashing, fermenting, distilling,barreling and bottling.

Neil Espinosa also joins the pod. You'll occasionally find Neil in the tasting room, helping out with production and generally drinking with this same smile on his face. Neil is the right-hand man at Alley 6, trusted lush and ride-or-die partner.

Jason and Chandra are Healdsburg, Calif. locals. Chandra was born and raised in Healdsburg and Jason has lived in Healdsburg for 15 years. They both primarily work in the medical field, but share a great passion for crafting fine spirits. Together with Jason’s cousin DJ and business partner Matt, they started and run New Alchemy Distilling. They distill all their spirits in-house, hand label and bottle, and distribute their products to bars and restaurants in the Bay Area.

Rob Lippincott, owner of The Parish Cafe in Healdsburg and Santa Rosa, is a New Orleans native— one could say that’s where his appreciation for a great cocktail comes from. He was a fishing boat captain in Louisiana before meeting his wife in Southern California, eventually settling down in Healdsburg. His love for home inspired him to bring a little New Orleans to wine country.

Josh Opatz and Shane Harlan are brothers and represent the XY chromosomes of Young & Yonder Spirits. Before they came together to work on this venture, Josh worked in San Francisco, holding down a corporate career in finance while slowing building the dream of starting a distillery back in his hometown of Healdsburg, California. Shane previously worked in winemaking in Sonoma County, and then became part of Y/Y at the end of 2017 to help with the ongoing distillation and fermentation programs at the distillery. The guys work daily with Sarah, Josh’s wife and co-founder of Y/Y, making the business a three person family powerhouse. Their distillery and tasting room is at 449 Allan Court, Healdsburg, CA 95448.

Herbie Benham IV is a man of many hats: long time bartender, brand ambassador of Graton Distilling Company, gourmand, embracer and peddler of vice, musician, and surfer. He is born and raised in California and considers every part of the golden state his home. He is committed to quality, whether in the craft spirits he helps develop or in the music that he creates. Keep an eye out for him in cocktail bars and stages all over California.

Sebastian Knox is a Chef who has worked in restaurants throughout the Bay Area including Oliveto in Oakland, and Oenotri in downtown Napa. He later moved to Hopland, California, to help open Piazza de Campovida, where he met Marty Garcia. Marty is a transplant from southern California who has worked in the service industry for 20+ years with stints at Foreign Cinema and Zeitgeist in San Francisco.
